Use in soups and stews.

1 tsp. ground ginger
1/2 tsp. ground cardamom
1/2 tsp. ground coriander
1/2 tsp. ground fenugreek seeds
1/2 tsp. grated nutmeg
1/4 tsp. ground cloves
1/4 tsp. cinnamon
1/4 tsp. allspice
2 Tbsp. salt
1 1/4 (one and one-fourth) c. (yes, c.) cayenne pepper
1/2 c. paprika
1 tsp. freshly-ground black pepper

In a heavy saucepan, toast the first eight spices for 5 mins.

Add remaining spices and continue stirring for about 12 mins.

Cool and store it in a tightly covered glass jar. This will keep in your refrigerator for up to 6 months.
