Recipe for cooking futari - squash and yams

1 small onion, chopped
2 Tbsp. canola (or other vegetable) oil
1 lb. Hubbard squash, pared and
    cut into 1-in. pieces
2 med. yams or sweet potatoes,
    pared and cut into 1-in. pieces
1 c. coconut milk
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground cloves

Cook and stir onion in oil in skillet over med. heat until tender. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer 10 mins.

Simmer uncovered or without a lid, stirring occasionally, until vegetables are tender — about 5 mins. longer.

Yields 6 to 8 servings.
