Recipe for cooking moui nagden - african beef and rice

1 lb. beef round steak, 1/2 in. thick
2 Tbsp. canola (or other vegetable) oil
1 c. water
1 bay leaf
1 tsp. salt
1/8 to 1/4 tsp. crushed red pepper
1 (16 ounce) can red kidney beans, drained
1 c. uncooked regular rice
2 med. green bell peppers, cut into 1-in. pieces
1 med. onion, chopped
1 1/2 tsp. salt
1/2 to 1 tsp. curry powder
1/4 tsp. pepper 

Cut beef into 1-in. pieces. Heat oil in 10-in. skillet until hot. Cook and stir beef in oil over med. heat until brown on every side, about 15 mins.

Add water, bay leaf, 1 tsp. salt and the red pepper. Heat to boiling; reduce heat. Cover and simmer 45 mins.

Drain beef, reserving broth. Add enough water to reserved broth to measure 2 c.. Mix beef, broth and remaining ingredients. Pour into ungreased 2-quart casserole. Cover and bake at 350 degrees fahrenheit until liquid is absorbed — 45 to 50 mins.

Serve with sliced tomatoes.

Yields 6 servings.
