Recipe for cooking sweet potato salad

4 med. sweet potatoes, boiled 1/4 c. peanut or canola (or other vegetable) oil 2 Tbsp. lemon juice 1/2 tsp. salt (optional) 1/4 tsp. pepper 1/2 c. chopped celery 1/2 c. chopped green pepper 1/2 c. thinly sliced green onions Parsley Cut potatoes in cubes; place in glass or plastic bowl. Mix oil, lemon juice, salt and pepper; pour over potatoes. Cover and refrigerate at least 4 hours. Stir in celery, green pepper and onion. Garnish with parsley.
