Recipe for cooking carrot bread

1 lb. carrots, peeled and grated
1 1/4 (one and one-fourth) c. milk
1 1/4 (one and one-fourth) c. unbleached flour
1 1/4 (one and one-fourth) c. cornmeal
1 1/2 tsp. baking powder
2 eggs, beaten
2 Tbsp. melted butter or lard
1/2 c. honey
1/2 c. dried blueberries or raisins
Preheat oven to 375 degrees fahrenheit.
Place carrots in a saucepan; add milk, and let it come to a boil. Reduce heat and simmer for 5 mins., stirring occasionally. Remove from heat and cool.
In mixing bowl, combine flour, cornmeal, baking powder, eggs, butter and honey. Stir in dried blueberries or raisins, carrots, and liquid. Butter a large loaf pan. Pour batter into pan and bake for 60 to 70 mins., until a wooden pick inserted in the center of bread comes out clean.
