Recipes from Amish Country :: Amish Poultry Dishes
Source: Elizabeth Coblentz 1 (5 pound) chicken, cooked and cubed 2 c. chicken broth 2 c. uncooked rice 2 c. milk 2 c. bread cubes 4 eggs Salt and pepper to taste 2 c. diced celery Stir and mix all ingredients. Spoon into a greased baking dish. Bake at 350 degrees fahrenheit for 1 hour or until a knife comes out clean when inserted in the center of the loaf. Serve in slices. Feeds quite a few people (about 20).
