Recipes from Amish Country :: Amish Yeast and Quick Breads
1 c. sourdough starter
1 c. canola (or other vegetable) oil
1 c. sugar
4 eggs
2 tsp. vanilla extract
2 tsp. baking soda
1 tsp. baking powder
1 (3 ounce) box instant vanilla pudding mix
2 c. flour
2 tsp. ground cinnamon
1 c. chopped pecans
1 c. peeled, cored and chopped apple
1 c. raisins
Preheat oven to 325 degrees fahrenheit. Grease three 9 x 5-in. loaf pans.
Place the starter in a bowl. Stir in oil, sugar, eggs and vanilla extract and mix well.
Combine the flour, baking soda, baking powder, instant pudding and cinnamon. Add the flour mixture to the starter mixture and beat by hand. Add the pecans, raisins and apples and mix well. Pour batter into the prepared pans. Yields 3 loaves.
