2 c. sugar 3 eggs 1 1/2 (one and one-half) c. canola (or other vegetable) oil 1 tsp. vanilla extract 3 c. flour 1 tsp. baking soda 1 tsp. cinnamon 3 c. diced apples 1 tsp. salt Combine sugar, eggs, oil, flour, salt, soda and cinnamon. Fold in apples. Pour into a greased 13 x 9-in. pan. Prepare Topping. Topping 1/2 c. sugar 1 tsp. cinnamon 1/2 c. pecans, chopped Mix sugar and cinnamon together. Sprinkle and distribute on top of batter. Sprinkle and distribute pecans on top and bake at 325 degrees fahrenheit for 40 to 50 mins.
