1 c. oats
1 1/4 (one and one-fourth) c. boiling water
1/2 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla extract
1 1/2 (one and one-half) c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
Topping (use on warm cake):
5 Tbsp. margarine
1/2 c. brown sugar
1/2 c. milk
1/2 c. coconut
1/2 c. chopped nuts
Mix oats and boiling water; let stand 20 mins.
Cream together shortening, sugar, eggs, vanilla and add cooled oats with dry ingredients. Bake at 350 degrees fahrenheitor 35 mins.
Topping: Boil margarine, brown sugar and milk for 7 mins. Remove from heat, and stir in coconut and nuts.
