Recipes from Amish Country :: Amish Side Dishes
1 1/2 (one and one-half) c. grated turnip
1 1/2 (one and one-half) c. grated potato
3/4 c. milk
1/2 c. low fat yogurt
1/2 c. whole grain bread crumbs
1/4 c. sunflower, olive or safflower oil
2 med. onions, chopped
1 Tbsp. dried parsley
1/2 tsp. ground black pepper
Preheat oven to 375 degrees fahrenheit.
Thoroughly mix all the ingredients, except the bread crumbs, in a large bowl. Pour the mixture into a lightly greased shallow casserole. Scatter the bread crumbs over the top. Bake for 40 mins.
Serve immediately. Yields 5 servings.
Variation
Fry the bread crumbs in a small amount of oil, before scattering them over the top of the dish.
