3 eggs 2 c. sugar 2 c. shredded zucchini 1 c. canola (or other vegetable) oil 2 tsp. vanilla extract 3 c. flour 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 2 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. cloves 1/2 c. chopped nuts 1/2 c. raisins Beat eggs until foamy. Stir in sugar, zucchini, oil and vanilla extract. Gradually add dry ingredients and spices. Stir in nuts. Pour into bread pans which have been greased only on the bottoms. Bake at 325 degrees fahrenheit for 60 to 80 mins. Cool 10 mins. Remove from pans and cool completely. Makes 2 loaves.
