Recipes from Cajun Country :: Cajun Vegetable Side Dishes
1/2 c. sliced scallions 1 Tbsp. olive oil 1 Tbsp. red wine vinegar 1 whole clove 1 tsp. minced chile peppers 3 c. canned plum tomatoes 1 Tbsp. chopped fresh parsley 1/2 c. thinly sliced fresh okra In a saucepan, sauté the scallions in oil over med. heat for 1 minute. Add the vinegar and clove. Stir, cover and cook for 3 mins. Remove and discard clove. Stir in the okra, chiles, tomatoes and parsley. Simmer, covered, for 10 mins.
