Recipes from Cajun Country :: Cajun Main Dish Meats
2 Tbsp. canola (or other vegetable) oil 2 lbs. beef, cut into 1-in. cubes 2 Tbsp. flour 2 onions, sliced 1 (1 lb.) can tomatoes 2 celery tops 1 c. thinly sliced carrots 1 large potato, peeled and sliced 1 tsp. salt 1 tsp. thyme 1/3 tsp. hot pepper sauce 1 bay leaf Brown beef in oil. Sprinkle and distribute with flour. Mix well. Add onions and cook 5 mins. Add remaining ingredients and simmer, covered, for 1 1/2 hours. Serves 4
