1 envelope onion soup mix
1/2 c. plain dry bread crumbs
1 1/2 tsp. chili powder
1 tsp. ground cumin
1 tsp. thyme leaves
1/4 tsp. ground red pepper
2 lbs. boneless, skinless chicken breast halves, cubed
Canola (or other vegetable) oil
In a large bowl, combine onion soup mix, bread crumbs, chili powder, cumin, thyme and pepper. Dip chicken in bread crumb mixture, coating well.
Arrange chicken in a 13 x 9-in. microwave-safe baking dish, then drizzle with 2 to 3 Tbsp. oil. Microwave uncovered or without a lid at HIGH for 6 mins. or until chicken is done, rearranging chicken once; drain on paper towels.
