12 hard boiled eggs 1/4 c. mayonnaise 1 jalapeno pepper, seeded and finely chopped 1 Tbsp. ground cumin 1 Tbsp. prepared mustard 1 tsp. cayenne pepper 1/4 tsp. salt Paprika Snipped cilantro (optional) Shell cooked eggs. Cut eggs lengthwise into halves. Slip out yolks and mash them with a fork. Stir in mayonnaise and next five ingredients. Fill egg whites with yolk mixture, heaping lightly. Sprinkle and distribute with paprika, and garnish with cilantro, if desired. Makes 2 dozen
