Recipes from Cajun Country :: Cajun Potato, Noodle and Rice Dishes

Makes 4 servings
8 oz. andouille or other cooked spicy sausage, cut into 1/4-in. dice
1 med. onion
1 tsp. minced garlic
10 oz. frozen sliced okra, thawed
4 c. cooked long-grain white rice (about 1 1/3 c. raw)
1 Tbsp. Cajun spice blend or prepared blend (see note)
In a nonstick skillet, add sausage and stir often until slightly browned, 1 to 2 mins. Add onion, garlic and okra; stir often until onion is limp or soft, about 5 mins.
Gently mix in rice and Cajun spice blend; stir occasionally until the rice is hot and golden and the okra is tender, about 5 mins. Pour into a serving bowl.
NOTE: For Cajun spice blend, mix 3/4 to 1 tsp. cayenne, 1 tsp. paprika and 1/2 tsp. salt. - From Sunset magazine, October 2002
