5 to 6 Tbsp. olive oil
4 c. green onions, finely chopped, divided
3 c. diced ham
2 c. red bell pepper, finely chopped
6 c. frozen hash brown potatoes
4 tsp. dried thyme
1 1/2 tsp. Cajun seasoning
Heat large nonstick skillet over med.-high heat. Add 3 c. green onions, the ham and the bell pepper. Sauté until vegetables begin to soften, about 7 mins.
Add potatoes, thyme, and Cajun seasoning; stir to combine. Reduce heat to med. Cover and cook 8 mins.
Uncover and continue cooking until potatoes are tender and crusty, occasionally scraping up browned bits. (add more oil if necessary).
To serve, sprinkle and distribute with remaining 1 c. green onions.
