Recipes from Cajun Country :: Cajun Potato, Noodle and Rice Dishes
This is a recipe originating in the South Louisiana Bayou Country. 1 1/2 (one and one-half) c. cornmeal 1/2 c. flour 1 tsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 1 egg 1 onion, chopped 1 c. buttermilk 1 large jalapeƱo pepper, finely chopped (optional) Mix all ingredients. Drop with a large spoon into HOT oil in a deep fat fryer. Cook until golden brown, turning with a long wooden spoon.
