3/4 pound ground beef
1/2 pound ground veal
1/4 pound ground pork
1 1/2 (one and one-half) c. soft bread crumbs
1 c. light cream
1/2 c. chopped onions
3 Tbsp. butter
1 egg
1/4 c. minced parsley
1 1/2 tsp. salt
Soak bread crumbs in cream 5 mins. Sauté onions in 1 Tbsp. butter.
Combine all ingredients and beat 5 mins. at med. speed (8 mins. by hand). Form into 1-in. balls. Brown in 2 Tbsp. butter; set aside. Save pan drippings. Make the following gravy:
2 Tbsp. flour
1 can condensed beef broth
1/4 c. water
1/2 tsp. instant coffee
Stir 2 Tbsp. flour into fat in skillet, add 3/4 can of beef broth, 1/4 c. water and 1/2 tsp. instant coffee. Stir until thickened over med. heat. Add meat balls, cover, cook slowly about 1/2 an hour, basting occasionally.
Makes 5 dozen. Freezes well.
