Recipes from Cajun Country :: Cajun Main Dish Seafood
6 oz. uncooked med. noodles (about 3 c.)
1 Tbsp. canola (or other vegetable) oil
3/4 c. chopped green bell pepper (about 1 med.)
1/2 c. chopped onion (about 1 med.)
2 Tbsp. chopped fresh parsley
1/8 tsp. ground red pepper (cayenne)
1/8 tsp. pepper
2 cloves garlic, finely chopped
1 Tbsp. flour
1 (16 ounce) can whole tomatoes (undrained)
1 (10 ounce) pkg. frozen cut okra, thawed
1 (6 ounce) pkg. frozen cooked small shrimp, thawed and drained
1 (6 ounce) pkg. frozen crabmeat, thawed, drained and cartilage removed
Cook noodles as directed on pkg.; drain. Heat oil in 10-in. nonstick skillet over med. heat. Cook bell pepper, onion, parsley, red pepper, pepper and garlic in oil 3 mins., stirring frequently. Stir in flour and tomatoes; break up tomatoes. Cook uncovered or without a lid, stirring frequently, until mixture thickens and boils. Stir in okra, shrimp and crabmeat. Cook uncovered or without a lid 5 mins., stirring occasionally. Serve over noodles.
