Recipes from Cajun Country :: Cajun Quick and Yeast Breads
1 c. milk 1 c. (8 oz.) sour cream 2 (7.5 ounce) pkg. corn muffin mix 1/2 c. whole-kernel corn (frozen and thawed, or canned) Preheat oven to 375 degrees fahrenheit. Lightly grease bottom of 9-in.-square or rectangular baking pan. Combine all ingredients in a med. bowl. Stir until well blended and all mix is moistened. Pour into prepared pan. Bake 30 to 35 mins., until golden. Cool slightly before cutting. Serves 8 to 10.
