Recipe for cooking pork chop jambalaya

Recipes from Cajun Country :: Cajun Jambalaya, Gumbos and Chilies


2 lbs. pork chops
Salt and pepper
Canola (or other vegetable) oil
1 c. chopped onions
3/4 c. chopped bell pepper
1/4 c. chopped celery
1 c. water
4 c. cooked rice
1 1/2 (one and one-half) c. chopped green onion tops

Put 1/4 in. canola (or other vegetable) oil in bottom of pot. Brown pork chops that have been seasoned to taste. Remove chops from pot.

Sauté onions, bell pepper and celery in oil in which chops were browned. Remove all oil from the pot that you can and add a small amount of water to form a gravy. Put chops back into the pot. Cook on med. heat for about 20 mins. Add cooked rice and onion tops and stir well. Cover and simmer for 10 mins.

Serves 4.
