2 Tbsp. lemon juice 2 Tbsp. dry mustard 2 tsp. ground cumin 1 tsp. ground coriander 1 tsp. salt 1/4 tsp. garam masala (optional) 4 swordfish or halibut steaks, 1 in. thick (about 2 lbs. ) 2 Tbsp. ghee Mix all ingredients except fish and ghee. Spread mixture in an even way on both sides of fish. Place fish in shallow glass or plastic dish; cover and refrigerate at least 12 hours. Preheat oven to broil or 550 degrees fahrenheit. Arrange fish on rack in broiler pan; drizzle with ghee. Broil with tops about 4 in. from heat until light brown, about 7 mins. Turn; drizzle with ghee. Broil until fish flakes easily with fork, 5 to 7 mins. longer. Yields 4 servings.
