1/4 c. dark corn syrup 1/4 c. water 2 Tbsp. soy sauce 2 Tbsp. sherry 1 Tbsp. cornstarch 1 clove garlic, minced 1/4 tsp. ground ginger 2 Tbsp. canola (or other vegetable) oil 1 lb. med.-size shrimp, cleaned 1 small tomato, cut into wedges 1/2 c. green bell pepper pieces Combine first 7 ingredients. Heat corn oil in skillet. Add shrimp; cook, stirring occasionally, about 3 mins. Add sauce and remaining ingredients. Boil 1 minute, stirring gently. Serve over rice. Serves 4.
