1 1/2 (one and one-half) c. shelled fresh green peas* 1 c. shredded lettuce 3 scallions, sliced 2 Tbsp. water 2 Tbsp. butter or butter-replacement 1/2 tsp. salt 1/4 tsp. sugar Dash of pepper Heat all ingredients to boiling; reduce heat. Cover and simmer until peas are tender, about 8 mins. Yields 4 servings. * 1 (10 ounce) pkg. frozen green peas can be substituted.
