4 med. potatoes, cut into 1-in. cubes 2 tart apples, sliced softened 1 Tbsp. sugar 4 slices bacon, cut into 1-in. pieces 1 med. onion, sliced 1 Tbsp. butter or butter-replacement, softened Dash of ground nutmeg Heat 1 in. salted water to boiling. Add potatoes, apples and sugar. Heat to boiling; reduce heat. Cover and cook until potatoes are tender, 10 to 15 mins.; drain. Fry bacon until crisp; drain. Cook and stir onion in bacon fat until tender. Place potatoes and apples in serving bowl. Dot with butter; sprinkle and distribute with nutmeg. Top with onion and bacon.
