3 c. grated zucchini 1 tsp. salt 3 eggs 1 c. grated feta cheese 1 1/2 tsp. minced fresh mint leaves 3 Tbsp. flour Pepper Butter Mix zucchini with salt and let stand 1 hour. Squeeze out moisture. Beat eggs. Add zucchini, cheese, mint, flour and pepper to taste. Fry 1 Tbsp. at a time in butter over med. heat. Brown on both sides. Makes 18 pancakes or 6 servings.
