1 c. canola (or other vegetable) oil
1 c. sugar
3 large eggs
3 1/2 to 4 c. flour, divided
1 Tbsp. baking powder
1 1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/2 c. chopped walnuts
1/4 c. toasted sesame seeds
Preheat oven to 350 degrees fahrenheit. Lightly grease two baking sheets.
Beat oil and sugar. Add eggs one at a time.
In bowl, measure and mix together 2 c. flour, baking powder, cinnamon, nutmeg, nuts, and sesame seeds. Add flour mixture to egg mixture and add remaining flour as necessary to make a soft dough. Divide dough into four equal balls. Roll each to 12 in. long x 3 in. wide and 1/4-in. thick. Bake for 15 mins. on prepared baking sheets.
Remove loaves from oven. While warm, slice 3/4-in. thick diagonally or straight across. Place each slice cut side down back on baking sheet. Return to oven and lightly brown about 5 mins. per side to make a light toast.
