1 lb. spinach 2 med. onions, chopped 1 Tbsp. parsley, chopped 1/4 c. rice 1/4 c. olive oil Salt and pepper Mint leaves Sauté onions in heated oil until golden. Add the spinach which has been thoroughly washed and drained. Add a little water and bring to boil. Sprinkle and distribute parsley and add the washed rice. Stir; season to taste; allow to simmer for about 15 mins., or until done.
