Kadai

The Kadai is a type of frying pan which is large and deep with handles on both sides.

Traditionally, in the Indian kitchen these pans are made of heavy metal because it was kept over open flame for many hours. This stopped foods from sticking.
What it’s used for today includes:

• Sautéed,
• Frying
• Griddle
• Cooking salmon
• Potatoes
• Large casseroles on stove top

In today’s kitchen, the kadai is much larger, able to serve 10-15, and is used to make larger meals. Plus the added bonus of the non-stick Teflon has helped tremendously. They have been designed to be beautiful attractions to your table when you use them to cook and then serve food. They can be made of anything from copper to earthenware. You can find Kadai in sets of more than one in some stores.
