Parat
The parat is a wide shallow plate that has sloping edges to knead
dough. It is used in making the following:
• Chapatis
• Paranthas
• Puris
Parats have been made of stone but now are being made of copper.
They use rice hulls for polishing them. The dough is put into
the parat and kneaded while the high edges help keep it inside
to knead it over and over. This is a much better way of kneading
because with a parat it is kept inside and you knead almost all
the dough at the same time and not just pieces of it. The dough
is broken down faster this way. You should get a parat in your
home if you prepare a lot of homemade breads.
