Tava

The Tava is a flat cast iron skillet used to cook the following Indian dishes:

• Chapattis
• sorghum roti
• dosa
• ponganalu
• utappam

The flat pan sometimes has a slight edge to them to hold the batter inside. These are very useful in cooking chapattis. Tava with round bottoms are used to prepare jonna rotte. Then there’s the thick bottomed tava that is used to prepare dosa, utappam, and pesarattu. This tava is also known as a griddle. So, you get the idea on what all you can use this little pan for, the recipes are endless. In many Indian cultures you can see their pots and pans sitting by the fire, all well seasoned of course, and they know exactly what each one is used for what. To have a collection of Indian cookware would be invaluable.
