Clarified Butter (Ghee)
Clarified butter is unsalted butter that has had the milk solids
and water removed. After this process the butter will keep longer,
up to two months, and has a higher smoking point. Many wonderful
Indian dishes are prepared with clarified butter such as:
• Chicken Makhani (Butter Chicken)
• Lobster is excellent with this butter
• Gaajar Ka Halwa (carrot pudding)
• Besan Ka Laddoo (gram flour sweet)
• Malpua (pancakes in syrup)
• Mughlai Biryani
• Lehsuni Daal (garlic flavored lentils)
• Sarson Ka Saag
Just recently, Quartermaster Food and Container Institute for
the Armed Forces developed Clarified butter. This was especially
made for the storage life overseas for our troops. Clarified butter
makes very rich and creamy soups and sauces. Candies are especially
tasty since using clarified butter because it’s smooth consistency
and rich flavors. It is especially great on popcorn since the
moisture is removed it will not make your popcorn soggy.
