Spinach (Palak)

Spinach is an important souce of antioxidants, vitamin A and vitamin C. Spinach is best known in India as palak and its use in Ayurvedic medicine is widely spread in both Orient and the Western world. It has been recently associated with cancer prevention because the substantial range of carotenes found on its leaves.
