Allspice (Kebab Cheeni)
Allspice is the dried, unripened produce of a little evergreen
tree called the Pimenta Dioica plant. The produce is a miniature
sized berry which is sun dried to a reddish and brown color. Pimento
is called Allspice because its taste suggests a combination of
cloves, cinnamon and nutmeg.
Allspice is from places like Jamaica, Mexico, and Honduras. Allspice
is strong and scented. It is not a mix of "all spices,"
but its flavor and scent remind a lot of people of a combination
of cloves, cinnamon, and nutmeg. Allspice can be used in a variety
of different foods such as:
• Cakes
• Pies
• Cookies
• Soups
• Stews
• Spiced Tea Mixes
• Pickled Beats
• Eggs
• Cucumbers
• Corned Beef
Whole dried out allspice will keep indefinitely when kept away
from the light in sealed jars. It can be ground in a spice mill
or an electric coffee grinder. The ground spice loses taste fast.
