Asafoetida

Asafoetida is also known as devils dung, food of the gods, giant fennel, and stinking gum. Asafoetida is a plant that grows about 2 m tall with a stout and hollow. The sap from the bottom of the Asafoetida plant is used for as a spice for foods. The sap is a grayish white color when it is fresh and then turns dark after it dries. The sap after it dries can be hard to grate, but today it comes in powder form. There are many uses for Asafoetida such as:

• Marinades
• Frying fish
• Seasoning meats
• Eggplant dishes
• Helping the digestive system
• Used in making pickles

Asafoetida gives off an onion smell and is very strong smelling. With its odor being so strong, it must be kept in air tight jar so it doesn’t make other spices smell as well. After cooking with Asafoetida the strong smell starts to fade away.
