Cloves (Lavang)

Cloves are a strong pungent spice used for many meaty dishes. The Chinese use it for an important ingredient in incense making. Oil of cloves is used for toothache pain. Several India dishes also use cloves to give them unique flavorings.

The main active ingredient that comes from cloves is eugenol. This has been known for centuries that it helps kill bacteria and germs. This keeps meats fresh, so not to spoil when it is out in the open for too long. If being used as medicinal oil, this must be kept in a dark bottle to preserve its potency. Cloves are also widely used in crafts.
