Parsley
Parsley is generally used to add color and visual appeal to a large number of foods, however, its dry leaves have a flavor and aroma that is vegetable and green, like the color of the parsley leaves.
In India, like in many other countries around the world, dry parsley leaves are used to garnish foods and for flavoring stews and sauces, while fresh parsley goes well with fish and seafood.
As a condiment, the aroma and flavor mixes well with a variety of dishes such as:
- Soups
- Eggs
- Stews
- Sauces
- Stocks
In India and other Middle Eastern cuisine, parsley is part of the most spice blends of fine herbs. The variety of parsley with curly leaves is more commonly used in bouquet garni and food decoration.
As other culinary herbs, parsley has been used in medicine administered as diuretic tea infusion and to control high blood pressure.
