Recipe for cooking indian butter chicken

3 lbs. boneless chicken pieces
Oil (for frying)
1 1/2 (one and one-half) c. finely chopped onion
2 tsp. minced garlic
1 1/2 tsp. minced ginger
1 tsp. Indian red chili powder
1 Tbsp. garam masala
2 c. half-and-half or whipping cream
2 c. canned tomato sauce
4 to 6 Tbsp. melted butter
Chopped parsley (for garnish)
Heat 1 Tbsp. oil in large sauté pan and brown chicken pieces. Remove and set aside.
Add more oil to pan. Fry onions, garlic and ginger until transparent. Add chili powder and garam masala, cook about 2 mins. Add tomato sauce, cook about 4 mins. Add cream, return chicken pieces to pan. Let it come to a boil, then turn heat to low and simmer uncovered or without a lid for 30 to 40 mins. Remove from heat and pour melted butter over it. Cover and let stand for 5-10 mins.
Serve with basmati rice.
