1 c. long grain rice
3 c. whole milk
1 c. evaporated milk
1/2 c. sugar
1 stick cinnamon
1/2 c. raisins
1/2 Tbsp. brandy
1 tsp. vanilla extract
Ground cinnamon
Preheat oven to 350 degrees fahrenheit.
Soak the rice in hot water for 10 mins.
Drain and place in a 2-quart pan with a lid. Add 2 c. of milk to the rice and stir. Let it come to a boil, covered, over med.-high heat. As soon as the milk begins to boil, place the covered pan in the oven for 15 mins., then remove. The milk should be completely absorbed and the rice cooked.
Meanwhile, in another pan heat the remaining c. of milk, evaporated milk, sugar and the cinnamon stick. Allow to barely simmer for 5 mins. Add the raisins, brandy and vanilla extract and simmer for an additional 10 mins. Add the rice and continue cooking, stirring often, for 5 mins.
Serve in individual dishes and sprinkle and distribute with ground cinnamon.
