Makes 4 servings.
1 c. Cowpoke Barbecue Sauce, divided
Nonstick cooking spray
10 oz. boneless skinless chicken breasts,
cut lengthwise into 1 x 1/2-in. pieces
2 green or red bell peppers, thinly sliced
1 c. sliced onion
2 c. tomato wedges
4 (6-in.) warm flour tortillas
Prepare Cowpoke Barbecue Sauce.
Spray large nonstick skillet with cooking spray. Heat over med.-high heat until hot. Brush chicken with 1/4 c. barbecue sauce. Add to skillet. Cook and stir 3 mins. or until chicken is browned. Add peppers and onion. Cook and stir 3 mins. or until vegetables are crisp-tender and chicken is no longer pink. Add tomatoes. Cook 2 mins. or until heated through, stirring occasionally.
Serve with warm flour tortillas and remaining 3/4 c. Cowpoke Barbecue Sauce. Garnish with cilantro, if desired.
Cowpoke Barbecue Sauce
Makes 2 c..
1 tsp. canola (or other vegetable) oil
3/4 c. chopped green onions
3 cloves garlic, finely chopped
1 (14 1/2 ounce) can crushed tomatoes
1/2 c. ketchup
1/4 c. water
1/4 c. orange juice
2 Tbsp. cider vinegar
2 tsp. chili sauce
Dash Worcestershire sauce
Heat oil in large nonstick saucepan over med. heat until hot. Add onions and garlic. Cook and stir 5 mins. or until onions are tender. Stir in remaining ingredients. Reduce heat to med.-low. Cook 15 mins., stirring occasionally.
