2 Tbsp. canola (or other vegetable) oil 4 lbs. separated chicken wings 2 c. enchilada sauce 1 envelope taco seasoning mix 1/2 c. finely chopped canned jalapeƱos In a large skillet, heat the oil over med. heat. Add the chicken. Fry until lightly browned. Remove from skillet and drain on paper towels. Preheat the oven to 350 degrees fahrenheit. In a 13 x 9-in. baking dish, combine the enchilada sauce, taco seasoning and jalapeƱos. Blend well. Arrange the chicken pieces in the sauce and bake for 35 to 40 mins., or until the chicken is no longer pink and the juices run clear. Makes about 40.
