1 pint shucked select or large oysters, drained
2 med. tomatoes, chopped
1/2 c. half-and-half, divided
2 c. cracker crumbs (about 20 crackers)
1/2 c. butter or butter-replacement, melted
1/2 tsp. salt
1/2 tsp. ground cumin
1/4 tsp. ground allspice
1/8 tsp. ground red pepper
Lime or lemon wedges
Mix oysters and tomatoes; arrange in ungreased 11 x 7-in. baking dish. Pour 1/4 c. of half-and-half over mixture.
Mix remaining ingredients except lime or lemon wedges and remaining half-and-half; sprinkle and distribute over oysters and tomatoes. Pour remaining half and half over crumb mixture. Bake uncovered or without a lid at 375 degrees fahrenheit until light brown, about 1/2 an hour.
Garnish with lemon wedges.
