1 small onion, minced 2 Tbsp. lard or bacon fat 1 c. blue cornmeal 1 c. unbleached flour 1 tsp. salt 1 Tbsp. baking powder 1 c. milk 2 eggs, beaten 1 c. pork cracklings 1/4 c. minced jalapeño 1/3 c. grated Monterey Jack cheese Preheat oven to 450 degrees fahrenheit. Sauté onion in the lard. Mix together cornmeal, flour, salt and baking powder. Add onion and remaining ingredients; pour the mixture into the hot frying pan. Bake for 20 to 25 mins. Cut into wedges to serve.
