2 lbs. ground pork 1 Tbsp. canola (or other vegetable) oil 1 onion, finely diced 4 cloves garlic, minced 1 jalapeno pepper, seeded and minced 1/4 c. minced dried tomatoes 2 Tbsp. chili powder 2 tsp. ground cumin 1 1/2 tsp. salt 1 tsp. thyme 2 tsp. black pepper 1/4 c. chopped parsley 1/2 c. bread crumbs 1/2 c. milk Sauté onion, garlic and jalapeno in oil about 10 mins.; let cool slightly. Combine with all other ingredients and mix thoroughly. Place mixture in 9 x 4-in. loaf pan. Bake at 350 degrees fahrenheit for 1 1/2 hours. Serve with mashed potatoes and gravy.
