3 bell peppers - mixed colors 1 bunch scallions, cleaned and sliced into 2-in. long pieces 8 oz. cleaned and cooked med. shrimp, sliced in half 1 c. pepper jack cheese In a nonstick skillet or a nonstick griddle over med. high heat, arrange the peppers and scallions so they are in an even way distributed and attractive. Cook until brown on the bottom, about 8 to 10 mins. Top with shrimp and sprinkle and distribute with cheese. Remove from heat when cheese is melted. Serves 6 to 8 as appetizers.
