1 to 2 thin taco-size flour tortillas for each person 1/3 c. fruit spread for each tortilla (at room temperature) Light sprinkling of salt Light sprinkling of cinnamon Fresh fruit for garnish, if desired Add just enough olive oil to a griddle to lightly cover the bottom. Heat the griddle. Spread fruit spread on each tortilla to within 1 in. of the edges. Lightly sprinkle and distribute with salt. Fold tortilla in half over the fruit spread. Cook the tortilla for a couple mins. on each side. Garnish with fresh fruit and a light sprinkling of ground cinnamon.
