1 c. flour 1/2 c. yellow cornmeal 1/4 tsp. salt 1 egg 1 1/2 (one and one-half) c. cold water 1 lb. lean ground beef Tomatoes, chopped Onions, chopped Green bell pepper, chopped 1 lb. cheese, grated Lettuce, thinly sliced Combine flour, cornmeal, salt, egg and water in a large bowl, then beat. Spoon 3 c. of batter onto a moderately hot ungreased griddle, flattening with the bottom side of a spoon to make thin (1/4-in.) pancake. Turn tortilla when edges become dry, but not browned, and cook on other side. Set aside. To complete meal, brown ground beef. Reheat tortillas on a hot griddle with oil until lightly browned. Place a portion of tomato, onion, bell pepper, cheese and lettuce on top of each tortilla; roll and enjoy!
