1 c. white or yellow cornmeal 1 c. sifted flour 1/4 c. sugar 3 tsp. baking powder 1 tsp. salt 1 egg 1 c. milk 1/4 c. melted butter Preheat oven to 425 degrees fahrenheit. Combine cornmeal, flour, sugar, baking powder and salt in a bowl. Beat egg with milk and butter. Add to the dry ingredients and stir lightly, just until mixed. Pour into a well-buttered 9-in. square or rectangular pan. Bake for 20 to 25 mins. Tamale Cornbread Add 2 tsp. chili powder to the dry ingredients and 1/2 c. finely-chopped ripe olives to the batter before baking.
