Recipes from the Middle East and North Africa :: Middle Eastern Main Dish Poultry


3 lbs. chicken pieces
1 med. onion, chopped
2 Tbsp. shortening
2 c. water
2 c. ground walnuts
1 c. pomegranate syrup
2 Tbsp. lemon juice
1/2 to 1 c. sugar (depending on taste)
Poultry seasoning
Pepper

Sauté the onions in the shortening over med.-high heat until they are limp or soft. Add the chicken pieces, poultry seasoning, and pepper. Sauté until the chicken is browned on every side. Add water and let it come to a boil. Lower the heat, cover pan, and let chicken summer for about 1 hour.

Add the ground walnuts, pomegranate syrup, lemon juice, and sugar. Simmer, uncovered or without a lid, for 40 mins., stirring occasionally.

Serve over jasmine rice with plain yogurt.
